Pork is the main source of vitamin B1 from the diet and, for example, a portion of Prosciutto Toscano PDO (50g) covers more than 30% of the daily requirement of vitamin B6 and B1. The total lipid component is optimal thanks to the high content of unsaturated fatty acids, the good fats that are good for health, such as oleic acid. In Prosciutto Toscano PDO a lipid content of 22% is observed, which drops to 8.8% if the peripheral layer of fat is removed. The proteins present are easy to digest and therefore make the PDO Tuscan Ham suitable for any type of diet. Finally, as per regulation, Nitrites, Nitrates or preservatives are absent, so we are talking about a product that is good as well as healthy.
